Filipino Food Recipe: Suman na Mongo


Filipino Food Recipe Ingredients
  • 1 cup malagkit (glutinous rice)
  • 1 cup mongo
  • 1-1/4 cups sugar
  • 3/4 cups coco milk
  • coco cream from 1 grated coconut
Filipino Food Recipe Ingredients

1. Soak, grind, and drain malagkit in a muslin bag (sako sa harina) to get a mealy dough like that used for palitao.
2. Cook mongo in water until soft (and mushy). Drain the water. Use a colander. Set aside.
3. Prepare latik and oil from coco cream.
4. Boil coco milk and sugar until thick. Add cooked mongo and cook like Bukayo.
5. Combine this mixture with mealy malagkit thoroughly and wrap measured amounts in banana leaves (wilted by passing over an open flame).
6. Steam 30 minutes...and the Filipino Food recipe of Suman is ready to serve..! Enjoy it !

Filipino Tortang Talong (Eggplant Omelet)

Filipino Food Recipe Ingredients :
  • 2 to 4 talong (eggplants), average size
  • 2 to 3 eggs, beaten
  • salt and pepper, to taste
  • oil, for frying
Filipino Food Recipe Instructions :

Broil eggplants until tender (the skins are charred and blister appears).
Once cool, peel off the skins of the eggplant and retain the crown and the stem. Gently flatten its meat by using the back of a fork. Set aside.
In a bowl, beat the eggs and season with salt and pepper.
In a skillet, heat oil over medium heat. Dip each eggplant, one at a time into the egg mixture. Gently bring the bowl near the skillet and tip, lowering the eggplant onto the heated oil.
Fry until golden brown on one side, then turn and brown the other. Drain on paper towels. Keep warm and serve.

Guinataang Halo-Halo (Coconut Milk Medley)

Filipino Food Recipe Ingredients :
  • 5 cups fresh coconut milk (or 1 can coconut milk, diluted with 4 cups water)
  • 1 pandan leaf
  • 1/2 cup sugar
  • 2 gabi (taro root or yam), cut into cubes
  • 2 ripe saba (plantain bananas), cut into cubes
  • 1 medium sweet potato, cut into cubes
  • 1/2 cup preserved langka, drained and cut into strips
  • 2 tbsp. quick-cooking tapioca
Filipino Food Recipe Instructions :

Simmer coconut milk and pandan leaf over moderate heat. Stir in sugar until dissolved.
Add sweet potato, gabi and saba(plantain bananas) into simmering coconut milk and cook for 20 minutes or until soft.
Add langka and tapioca. (If using regular tapioca, add it with the sweet potatoes because it takes longer to cook.)
Tapioca is cooked when it turns clear. If a white spot is still visible in the center, cook until it disappears for about 5 minutes more. Taste and add more sugar if necessary.
Serves 6 to 8.

VARIATION:
Add bilo-bilo after tapioca is fully cooked. Guinataang Bilo-bilo (Glutinous Rice Flour Balls in Coconut Syrup)

To make bilo-bilo, combine 1 cup glutinous rice flour with 1/2 cup water, mix until well blended, knead a few times until smooth. (Follow Bilo-bilo procedure, see recipe.) Add sticky rice balls to simmering coconut milk. Remove from heat when all balls float to the top.

Try this traditional Filipino Food ....

Filipino Food Recipe Ingredients:
  • 3/4 kilo Pork, cut into chunks
  • 3 tomatoes, sliced
  • 2 onions, diced
  • 5 cloves of garlic, minced
  • 100 grams Kangkong (river spinach)
  • 100 grams String beans
  • 2 pieces horse radishes, sliced
  • 3 pieces gabi (taro), pealed
  • 2 pieces sili pag sigang (green finger pepper)
  • 200 grams sampalok (tamarind)
  • 3 tablespoons of patis (fish sauce)
  • 1 liter of rice wash or water
Filipino Food Recipe Instructions:

* Boil sampalok in water until the shell shows cracks. Let cool then peal off the shells and with a strainer, pour samplalok (including water) into a bowl. Gently massage the sampalok meat off
the seeds, strain again.
* In a pot, sauté garlic and onion then add the tomatoes. Let simmer for 5 minutes.
* Add pork and fish sauce then add the rice wash. Bring to a boil then simmer for 15 minutes then add the gabi. Continue to simmer for another 15 minutes or until the pork is tender.
* Add the horse radish and simmer for 10 minutes then add the string beans, kangkong and sili (for spice-optional). Let boil for 2 minutes.
* Serve piping hot.

Beef Morcon Recipe

Filipino Food Recipe Ingredients:

  • 1 kilo beef, sliced 1/4 inch thick (3 pcs.
  • 1/4 kilo ground beef liver
  • 200 grams sliced sausages or ham
  • 200 grams pork fat (cut is strips)
  • 3 hard boiled eggs, sliced
  • 100 grams cheddar cheese in strips
  • 100 grams grated cheddar cheese
  • 2 onions, chopped
  • 5 bay leaf (laurel)
  • 1/2 teaspoon of ground black pepper
  • 1/2 cup vinegar
  • 2 teaspoon salt
  • 2 cups of water
  • 2 meters thread or string (for tying)
Filipino Food Recipe Instructions:

Spread and stretch the sliced beef on your working table.
Arrange the filling on the sliced beef: sausage strips, cheese strips, sliced eggs, pork fat and some ground liver. Roll the sliced beef with all the filling inside and secure with a thread or string. Repeat the procedure for the two remaining beef slices. On a pot, place the beef rolls and put the water, the remaining ground liver, grated cheese, chopped onions, bay leaves, ground black pepper and salt.
Cover the pot and bring to a boil. Simmer for one hour. Add the vinegar and continue to simmer of another hour or until beef is tender. Slice the beef morcon, arrange on a platter and top with the sauce/ gravy poured on top. The nice Beef Morcon Filipino food Recipe is ready to serve.....great taste. Enjoy !

FILIPINO FOOD RECIPE INGREDIENTS
  • 4 eggs, well-beaten
  • 1 cup sugar
  • 2 cups rice flour
  • 1/2 tsp. salt
  • 2 cups coconut milk (2nd or more presses; see separate recipe)
  • 1/4 cup melted margarine
  • 2 tbsps. baking powder
  • 1/4 cup coco cream (first press)
  • 1/4 cup sugar for topping
FILIPINO FOOD RECIPE INSTRUCTIONS
1. Add sugar to beaten eggs.
2. Combine salt and rice flour; add to egg mixture.
3. Add melted margarine and baking powder.
4. Pour into banana-leaf lined mold.
5. Bake in 375 degree Fahrenheit oven.
6. Brush top with coco cream and sugar; bake until golden crust is formed.
7. Makes 3 large bibingkas...enjoy the Filipino food !

Filipino Food Recipe : Grilled Squid or Inihaw na Pusit

Filipino Food Recipe Ingredients
  • 1 kilo medium to large fresh squid
  • 1 bottle or 1 cup Sprite or 7-up (for extra sweetness)
  • 1/4 cup soy sauce
  • 2 Tablespoons Calamansi juice
  • 2 Tablespoons minced garlic
  • 2 teaspoons cracked black pepper
Optional stuffing for body cavity
  • 2 medium-sized onions, sliced
  • 2 medium-sized tomatoes, chopped
  • salt and pepper for seasoning

FILIPINO FOOD RECIPE INSTRUCTIONS

1. Wash the squids well. Remove the long thin membrane in the head and body and slit the eyes to bring out the ink. Wash the body cavity well.

2. Place the squid in the bowl and add all the ingredients all together. Marinate for 1 hour or more.

3. Before grilling, place the squid in barbecue sticks. Keep the marinade sauce.

Optional

Stuff the squid cavity with a mixture of onions and tomatoes. Sew the ends of the squid so contents to prevent spillage.
4. Prepare the fire.
5. When grill is ready, grill the squid. Use the marinade sauce to baste the squid while it is being grilled. Don’t overcook or else the squid will come out chewy. One just wants it easy to bite and tender.

6. You will know it is cooked when there are few grill marks, the squid is cooked to the center of the body. It takes around 3 to 5 minutes. Just exercise caution not to overcook. You can always check one squid to determine doneness.
7. Serve hot with dipping sauce like soy sauce with sili...enjoy the Filipino food !
